It's official ...

****update 7/1/09*****
It's been brought to my attention that I am a baker - and yes, that is true. I love the baking. I'm just not June.
I'm a housewife!
Not by choice though.

Today was my last day at work and I am having mixed emotions. On one hand, I am looking forward to a new adventure and being forced to think outside of the box. I have a few things up my sleeve and am very eager to see how it all pans out. I'll keep you updated as things begin to unfold a bit more. On the other hand ... I am totally wigging out! It is definitely not the time to be laid off by your employer and if I had a choice I so would have stayed. But I didn't have a choice and now I am competing with probably at least 1,000 other applicants for each job I am applying for. Scary times! Avoid this position at all costs.

But I am looking at this as a blessing and a new adventure. If you don't stay positive, then you can't expect something grand to come your way. So ... I am upbeat and positive and waiting for my 'something grand.'

So, my plans for the time being?? Finding a job, playing house, getting crafty, and figuring out my destiny. And I am excited! I am young and have my whole life ahead of me and cannot wait to find out what is next.

But I am no June Cleaver ... and the Mr. knows that too. He knows not to expect a homemade, just out of the oven, bubbling hot apple pie sitting on the kitchen window sill when he gets home from work. But a premade pie from the bakery at the local grocery store? Sure, why not.

But I didn't take pictures today.
And it's too late in the evening to get the camera out now.

Happy Father's Day ... a bit late!

I meant to do a post on Sunday and got sidetracked. But I just wanted to do a 'shout out' to my Dad and Mike on Father's Day!!! We truly have the greatest fathers we could ask for and we're so grateful for you both!

It's official ... we've moved!


First of all, welcome to our blog if you have never visited us here before! And secondly, we bought our first home! We moved in the last weekend of May and our life has been a whirlwind since with all of the packing and unpacking, visiting family in New York, and preparing for our first visitors. But ... alas! I have finally posted pictures. We still have some work to do to make it 'ours' so please pardon bare walls and such. Hope you all enjoy!

Yummy Dinner at the Rudy's

I wanted to share one of my newest, favorite meals. It is delicious ... and HEALTHY! Who knew?!?!

Easy Chicken and Cheese Enchiladas
prep: 10 minutes
bake: 40 minutes
makes: 6 servings


1 can (10 3/4 oz) Campbell's Condensed Cream of Chicken Soup (98% fat free)
1/2 cup sour cream
1 cup Pace Picante Sauce
2 tsp. chili powder
2 cups chopped, cooked chicken
1/2 cup shredded Monterrey Jack cheese
6 wheat tortillas (6")
1 small tomato, chopped
1 green onion, sliced

This dish is also really good with mushrooms.

1. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
2. Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl.
3. Divide the chicken mixture and the tortillas. Roll up the tortilla and place them seamside up in an 11x8" shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish.
4. Bake at 350 for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

Our weekend in New York



This past weekend was wonderful! We flew to New York to celebrate Grammy's 80th birthday and to see family we haven't see in ... well, it's been too long.

ABC were also able to drive up to join in on the festivities!

On Friday we had a delicious NY bagel for breakfast, drove around the town where Mike and Sharon live, and then went to spend some time with Andrew's grandma and grandpa. It was a wonderful time and we are so happy we were able to visit with them. Grandma and Grandpa Watts were so excited to see us and we all enjoyed each other's company.







Saturday was a beautiful day to cookout for Grammy's birthday celebration. We had such a great time enjoying the weather, family, and of course - delicious food. A lot of family and friends were able to come in and help Grammy celebrate her special day.







It was so nice to break away from our normal routine and visit our family. We've both agreed that more trips to New York will be taken ... but maybe to a closer airport, right Mike?? :-) Atleast you have your Dunkin' Donuts.

Hope ya'll (have to stay true to my Southern roots) enjoy all of our pictures! We can't wait to go back for another visit.
